Tao Luau at Sway South First

After competing in a chef v. chef pig roast last fall, Chef Charles Schlienger wanted to bring the backyard cookout party vibes to Sway with their own luau-styled kickback. The team is going whole hog on this one — preparing a 200lb pig overnight, slow roasting it on a spit until dawn and serving it up with a ton of hearty accompaniments during Sunday brunch, like bao buns, kimchi slaw + green curry mussels with sausage butter.
Grab a plate of all-you-can-eat pig for $15 to pair with kaffir lychee tiki punch or a bacon old fashioned, available alongside some of Sway’s a la carte brunch favorites. After the meat sweats set in, grab another drink and stay a while to cheer on the Houston Texans as they take on the Carolina Panthers, aired in the dining room starting at noon.
