Dripping Springs Restaurant Le Vacher Serves French-Country Cuisine

Classics dishes like cassoulet, tartiflette and Salade Lyonnaise are paired with a thoughtful wine list

It’s still hot in Central Texas, but don’t let that stop you from indulging in the cheesy, meaty, decadence of Le Vacher. The French Country-influenced restaurant opened in Dripping Springs August 7, braving both the pandemic and triple digit temperatures to offer guests a Texas spin on French classics like cassoulet, tartiflette and Salade Lyonnaise. A full bar and thoughtful wine list compliment the menu, which is comprised of small bites, shareable plates and hearty main dishes.

Meaning “the herdsman,” Le Vacher also celebrates meat – notably, uncommon cuts of beef more typically found in butcher shops like teres major, a flavorful steak that comes from the shoulder. Chef and owner Jacob Euler, who previously served as executive pastry chef at Joël Robuchon’s namesake restaurant at the MGM Grand in Las Vegas, sources all his meat and poultry from Texas. “We ensure we’re purchasing from ranches that use ethical livestock management and adhere to high standards,” he says. Local produce is also used when available.

Le Vacher fills a niche in Dripping Springs, offering luxurious food in a modern, upscale setting. The spacious restaurant features two levels and an open kitchen, making it an ideal place to dine at a time when social distancing is required. There’s also a private dining room.

The restaurant will incorporate a seasonally changing menu that this fall will include “hard squash, French stews and more fowl.” A must-order staple, however, are the addictive potato croquettes filled with velvety Muenster cheese. These are particularly delicious with a sparkling wine.

Euler says his guests have enthusiastically embraced Le Vacher’s food and wine programs, adding, “We intend to utilize community feedback to hone and perfect the experience of our guests.”

Le Vacher (512 337 6977) is located at 136 Drifing Wind Run, Suite 101, in Dripping Springs. They’re open Wednesday through Thursday from 5 p.m. to 10 p.m., Fridays and Saturdays from 5 p.m. until 11 p.m., and on Sundays for supper from 11 a.m. to 7 p.m.
