Austin Proper to Open Kappo Kappo, a Japanese-French Tasting Counter
A 25-seat restaurant led by acclaimed chefs Haru and Gohei Kishi will blend kappo-style Japanese dining with French technique

This fall, the downtown Austin hotel will open Kappo Kappo, an intimate 25-seat restaurant that blends the centuries-old Japanese kappo tradition with the artistry of French cuisine. The name Kappo, which translates to “cut and cook,” is a style of dining that places trust in the chef. Guests sit just feet from the action, watching as each course is prepared and presented in real time.
“Kappo Kappo brings together everything we value at Proper: craftsmanship, creativity, and a sense of place,” said Brian De Lowe, co-founder and president of Proper Hospitality, in a recent press release. “It’s an experience that feels as intimate as it is refined, and we’re proud to bring something so layered and personal to the Austin dining scene.”
The project is led by twin brothers and chefs Haru and Gohei Kishi, whose culinary careers span Los Angeles, London, Dubai and Paris.

Convivial dining in an intimate setting
“Kappo Kappo is built on the spirit of conviviality. It’s about dissolving the barrier between guest and chef and creating something warm, personal, and alive,” said Haru Kishi. “We had a family ritual to do ‘on est bien’—good food, good drinks, a cozy space. That feeling is what Kappo Kappo is built on.”
The tasting menu will feature 11 courses, including eight savory and three dessert plates, with optional pairings of sake, wine, beer and cocktails. Dishes will highlight wagyu, seafood and seasonal ingredients.
Kelly Wearstler, designer of all Proper Hotels, created the space with Japanese craftsmanship in mind, featuring charred cypress wall paneling, illuminated millwork and stone details, all anchored by an open kitchen.
Kappo Kappo joins Austin Proper’s dining portfolio, which includes La Piscina, a poolside Mexican cantina; The Peacock, a Mediterranean grill; The Quill Room, a cocktail lounge; and Goldie’s, known for its afternoon tea service.
