The evening begins with a welcome cocktail, The Ruby Old Fashioned, followed by a four-course dinner. The multi-course menu includes selections such as potato pavé with caviar, sage brown butter scallops, slow-braised short rib with creamy risotto, and flourless chocolate cake, each paired with wines from Burgundy, South Africa, Lebanon’s Bekaa Valley, and Italy’s Langhe region.
