Austin is getting a dose of Barbie pink as the Malibu Barbie Cafe makes its debut on April 4. The interactive pop-up, a collaboration between media brand Bucket Listers and global toy company Mattel, will open at Wanderlust Wine Co.’s downtown location at 610 N Interstate Hwy 35.
After appearing in New York, Chicago, Miami, Houston and the Mall of America, the Barbie-themed café and roller rink features a 1970s Malibu-inspired setting, reflecting the era of Malibu Barbie’s debut. Designed to be a family-friendly experience, the pop-up blends nostalgia, dining, and interactive activities inspired by the world’s most famous fashion doll.
“Barbie has proven to be one of history’s ultimate icons, and it means so much for us to bring exclusive experiences like this to life for our community,” said Derek Berry, Bucket Listers’ President of Experiences in a recent press release.

The experience features a fast-casual menu created by “MasterChef” finalist and “Chopped” champion Becky Brown, offering all-day dining, desserts and themed drinks. In between bites, guests can lace up skates and take a spin on the roller rink. Each skate rental ($1) will support Girls Inc., the café’s charity partner.
“From the décor to the menu, every detail has been thoughtfully designed to celebrate the iconic Barbie style,” said Julie Freeland, Mattel’s Vice President of Global Location Based Entertainment.

Beyond dining and skating, the café will offer exclusive merchandise and themed events, including cupcake decorating classes, paint parties and 21+ skate nights.
Tickets, priced at $25 and including food and merchandise credit, are available exclusively through Bucket Listers. The pop-up will be in Austin through June 15.
