Still Austin Limited-Release Cask Strength Bourbon Debuts

The strong spirit will be available for purchase starting May 15th

Austin-based distillery Still Austin Whiskey Co. has launched its first limited-release Cask Strength Bourbon. The dark-hued, 118 proof (59 percent ABV) spirit is available for purchase starting tomorrow at the Still Austin distillery and will begin shipping to retailers across the Lone Star State this weekend. Only 1,100 cases of the new Bourbon will be released this month, with an additional 1,100 cases slated for distribution in September.   

“We’re excited to introduce our first Cask Strength Bourbon whiskey, which was aged for two and a half years,” John Schrepel, Head Distiller at Still Austin Whiskey Co., told Tribeza. “Whiskey lovers can enjoy it neat, on the rocks or mixed in a cocktail. Because of its complex, dark flavors, the new expression pairs well with desserts like crème brûlée, peach cobbler and apple pie.”

Made with 100 percent Texas rye grains grown by local farmers, the Bourbon’s mash bill is composed of 70 percent Non-GMO white corn, 25 percent Elbon rye and 5 percent wildfire malted barley. According to Still Austin, the whiskey was bottled at the same proof at which it was aged, without diluting it with water—resulting in a barrel proof Bourbon that’s rich with a deep spice finish. The suggested retail price for a 750ml bottle is $65.

Nancy Fraley, Master Blender at Still Austin, says the new Cask Strength Bourbon is a “deeper, darker, more robust version” of the company’s flagship 98.4 proof bourbon called The Musician. She says the new expression delivers “a nose of brandied cherries with fresh muddled mint, old fashioned blackberry cobbler with biscuit crust, and cinnamon toast in brown butter. The palate offers notes of grilled peaches drizzled with balsamic vinegar, butterscotch pecan pie, and dark brown sugar, followed by warming waves of rye spice, nutmeg, and clove.”

The artwork on the bottle of the Cask Strength Bourbon is a modified version of the label on The Musician. Created by artist and native Texan Marc Burckhardt, the imagery on the Cask Strength bottle features a black night sky, meant to represent the robust, dark whiskey inside the bottle.

Founded in 2015 by three Austin families, Still Austin Whiskey Co. is located in South Austin. The distillery opened to the public in 2017. The company says it’s committed to a grain-to-grass concept, meaning it never sources whiskey from another distillery, instead handling all whiskey-making processes in-house—including milling, mashing, fermenting, distilling, barreling and bottling. The team is led by Head Distiller John Schrepel, Master Blender Nancy Fraley and veteran Master Distiller Mike Delevante.
