Mezcal Mastery at Arriba Abajo’s New Omakase Tasting Experience in Austin

A new chapter in mezcal appreciation is unfolding within Arriba Abajo Rooftop Cantina located at the Thompson Austin. Guests can now book a Sip & Savor: Mezcal Edition. This intimate tasting experience invites guests to elevate their understanding and enjoyment of this complex Mexican spirit.
Housed within Tambien, the restaurant’s six-seat mezcaleria, will open for weekly private bookings combining carefully curated mezcal selections with an innovative six-course menu. The experience will take patrons on a cultural journey that bridges traditional Mexican spirits with contemporary Austin dining.

“We’re creating something that honors both tradition and innovation,” said Executive Chef Marc Marrone, who heads culinary development for Hyatt and Executive Chef of Arriba Abajo Rooftop Cantina. The menu, which changes weekly to showcase the freshest ingredients, reflects this philosophy. Dishes like Pan Seared Hokkaido Scallops with black garlic parsnip puree and Red Field Ranch Iberico Secreto with mole almendrado demonstrate the kitchen’s ability to weave together Mexican traditions with global influences.
The culinary team’s approach reflects a broader cultural synthesis. “A lot of our techniques are Mexican-acquired, but we incorporate local flavors and Spanish influences,” said one of the program’s creators. This fusion approach extends beyond the plate to create a comprehensive dining experience that complements Tambien’s collection of over 30 mezcal expressions.

As one specialist explains, mezcal’s future faces important questions about sustainability and accessibility. “In 30 to 50 years, unless you’re willing to pay $300-500 per bottle, mezcal production as we know it may change significantly.” This reality adds urgency to the experience, making each tasting an opportunity to appreciate this historic spirit while contemplating its future.
The Sip & Savor experience, priced at $125 per person, offers seating every Thursday at 7:30 p.m. Beyond the mezcaleria, Arriba Abajo maintains its position as a destination for Mexican coastal cuisine, complete with city views and regular programming including a Fiesta Happy Hour Sunday through Thursday and weekend brunch service.
